Sourdough Hot Dog Buns

Ingredients:
đ3/4 cup ready to use bubbly starterÂ
đ3/4 cup warm waterÂ
đ3 1/2 Â (500 gr) cups all purpose flour or bread flourÂ
đ1/4 (60 gr) cup coconut oil
đ 2 tablespoons sugarÂ
đ1 egg
đ1 tsp (6 gr) saltÂ

Directions:
Mix all ingredients in a mixer or by hand 8-10 minute.
Rise #1: let rest 1 hour covered.
Rise #2: Fold dough a few times, it will be softer now. Leave to rise again this time 8-12 hours or overnight.
Rise #3: Divide into 100 gr pieces of dough, stretch and roll each bun. (See below the differences between folding with and without flouring the surface)
Place on a baking sheet to rise one last time about 2 hours or until dough doubles.
Brush with egg and bake at 365F for 20-30 minutes.
