Sourdough Challah

Ingredients:
Levain
(make this the evening before you bake)
🫙50g active sourdough starter
🫙70g warm filtered water
🫙50g all purpose/bread flour
Challah Dough
🫙170g (3/4 cups) warm filtered water
🫙170g levain (all of it)
🫙 50g (1/4 cup) sugar
🫙 500g (3.5 cups) all purpose bread flour
🫙7g (1 tsp) salt
🫙48g (1/4 cup) olive oil
Directions:
🫙Levain:
mix all ingredients in a jar, cover lightly, may overflow.
☝Rise #1: Keep in a dark and warm place for 4-5 hours or until doubles and bubbly.
🫙Challah Dough:
Mix all ingredients including the levin until fully incorporated.
☝Rise #2: set aside for 30 minutes covered.
After 30 minutes, knead the dough 8-10 minutes.
Dough should be a bit sticky, don't add flour unless you have to and your dough is too tough.
☝ Rise #3: Leave to rise 8-10 hours.
I do this at night before I go to bed.
In the morning, I cut to same weight pieces and braid a beautiful challah.
☝Rise #4 last time:
Place your challahs in a warm place to rise for 2-3 hours.
Egg & bake at 350F for 20-30 minutes or until golden brown.
