Peach Jelly Sandwich Cookies

Peach Jelly Sandwich Cookies Recipe
Ingredients:
🍑 3 cups of all purpose flour
🍑 200 grams melted butter
🍑 2 medium eggs
🍑 3/4 cups of sugar
🍑 1/2 teaspoon Vanilla extract
🍑 Jelly (for filling)
Directions:
Mix all ingredients in a bowl, knead until you get a soft dough ball. Place dough in a bag and put in the fridge to rest for about 30 minutes.
On a clean and floured surface flatten dough to a thin layer, i divide my dough into 2, its easier working in small batches.
Make shape: Make flower or circle shaped cookies and place on a pan. Make a hole in the center of half of the cookies.
Bake at 350F for about 20 minutes or until ready, I flip over one of the cookies to make sure it is golden brown, that means its baked, cookies will continue to harden when they cool down.
When the cookies are cold add a teaspoon of jelly on each cookie and cover with its top cookie (with the hole) Sprinkle powdered sugar on top.
