My Best Sourdough Recipe

Ingredients:
🫙200gr (1 cup) bubbly starter (click for recipe)
🫙296 gr (1 1/4 cups) filtered warm water
🫙490 gr (about 3 cups) unbleached all purpose flour
🫙6 gr (1 tsp) salt

Directions:
In a large bowl mix water and starter until starter fully absorbed in the liquid then add all ingredients until incorporated do not knead.
🕛1st Rise: Leave to rest 30 minutes in a warm place covered.
🕛2nd Rise: After 30 minutes wet hands for this part: take out your dough and fold it a few times, it will be much softer now. Cover and let rise 1 hour.
🕛3rd Rise: After 1 hour wet hands again, take out your dough and fold it a few times. Cover and let rise again 1 hour.
🕛4th Rise: Wet hands again and fold dough a few more times. Put back in the bowl, cover and leave to rise 6-8 hours in a warm place until doubles in size.
🕛5th Rise - Shape: Stretch dough into a large square (in this step you can sprinkle toppings such as cheese cubes, olives, seeds) fold in from the sides then roll into a ball.
Tuck the ends, flour all sides of the dough and place in a towel covered bowl "pretty" side down.
Cover with a towel last rise in the fridge about 8-14 hours (usually overnight).
Bake:
Heat oven to 500F, put your cast iron inside the oven empty.
Flip your dough on a baking sheet, powder on some flour and score the dough with a knife in the center, you can also make beautiful art ♥️.
Transfer the beautiful dough with the baking paper into the pot, cover it and bake for 20 - 30 minutes.
Take out the dough from the pot and bake for another 10-15 minutes until beautiful golden brown and bread sounds hollow when you tap on it.
Slice when cool.
