“Ka’ak” Savory Sesame Biscuits
January 31, 2024
Kaak, or ka'ak, is a popular Middle Eastern bread typically shaped like a large ring or an oval and can be either sweet or savory.
This is my mother's recipe for making these savory kaak biscuits.
These are often enjoyed as a snack or served with tea.
Ingredients:
Dough:
🥨3.5 cups all-purpose flour
🥨1/2 tbsp salt
🥨1/2 cup vegetable oil
🥨1 tsp baking powder
🥨200 grams soft butter/margarine/plant butter
🥨1/4 cups warm water (add a tbsp of water at a time only if needed)

Topping:
🥨1/4 cup sesame seeds or black seeds (optional)
🥨1 egg mixed with 1 tbsp water
Instructions:.
In a large mixing bowl, combine the ingredients.
Mix everything together until a dough forms. You may need to add a little more water or flour to achieve the right consistency. The dough should be soft and not too sticky.
Place in a plastic wrap, and let it rest in ROOM temperature 10 minutes.
🥨Shape the Kaak:
Roll each piece into a rope shape, about 6-8 inches long. Then, shape it into a ring or oval shape, connecting the ends to form the kaak.
dip each kaak into egg mix, then sesame seeds or black seeds to coat the surface.
🥨Bake: Place the shaped kaak on a baking sheet lined with parchment paper or lightly greased.
🥨Bake in the preheated oven for about 20-25 minutes, or until the kaak turns golden brown and sounds hollow when tapped on the bottom.
🥨Cool and Serve: Allow the kaak to cool on a wire rack. Once completely cooled, you can store them in an airtight container.
Savory kaak is often enjoyed as a snack or with tea, but you can also serve it with cheese, olives, or other Middle Eastern dips like hummus or baba ghanoush.
Enjoy your homemade kaak!
