Ingredients:
🍖10 lbs kosher-certified lamb shoulder
Marinade:
🍖1/4 cup extra virgin olive oil
🍖8 cloves garlic, minced
🍖1 tbsp fresh rosemary, chopped
🍖1 tbsp fresh thyme, chopped
🍖1/4 cup chopped parsley
🍖2 tbsp honey
Veggies:
🍖3 med carrots cut to large pieces
🍖2 onions cut in quarters
Kosher salt and freshly ground black pepper, to taste
🍖Extra large oven bags or slow cooker liner.

Instructions:
A night before, mix all marinade ingredients, Rub this mixture all over the lamb shoulder, ensuring every nook and cranny is seasoned. Cover and place in the fridge to marinade overnight.
🍖Preheat Oven: Start by preheating your oven to a low and slow 320°F (135°C). This is crucial for that fall-off-the-bone tenderness we're after.
🍖Roast: Place the lamb in a roasting pan, add onions and carrots and cover it tightly with oven bag and foil. Roast in the preheated oven. Given the increased size, you'll need to roast it for about 3 to 4 hours, or until the meat is very tender.
🍖Rest: Let the lamb rest for about 20 minutes before carving. This is key to keeping it juicy.
🍖Serve: Carve the lamb and serve it on a platter, garnished with more fresh herbs for that extra touch of elegance.
