Chocolate Rum Cake

Chocolate Rum Cake, non dairy version so soft & moist, easy, no mixer needed.

Ingredients


Cake:

đŸ« 1 1/2 cups of sugar 

đŸ« 1 cup of oil 

đŸ« 2 eggs

đŸ«1 tsp of vanilla extract 

đŸ«1 tsp rum extract

đŸ«1/3 cup of cocoa powder 

đŸ«1 tbsp baking soda

đŸ«1 tbsp baking powder 

đŸ«2 cups of hot (boiling) water

đŸ«2 cups of flour 


Coffee:

đŸ«1 tsp instant coffee 

đŸ«1/2 cups of coffee 

đŸ«1 tsp rum extract 


Chocolate Ganache:

đŸ«1 chocolate bar or 1/2 cup of chocolate chips 

đŸ«1/4 cup (or more) of heavy cream or non dairy substitute.


Directions:


In a large bowl combine the sugar, eggs oil rum and vanilla extract, cocoa powder and baking powder until smooth.

Add flour and hot water gradually and mix until a smooth consistency, it will be liquidy, that’s just fine.


Transfer into an oiled sheet pan or dish, bake at 360F for about 30-40 minutes.

Ready when a toothpick comes out dry.
