Chocolate Rum Cake

Chocolate Rum Cake, non dairy version so soft & moist, easy, no mixer needed.

Ingredients
Cake:
đ« 1 1/2 cups of sugarÂ
đ« 1 cup of oilÂ
đ« 2 eggs
đ«1 tsp of vanilla extractÂ
đ«1 tsp rum extract
đ«1/3 cup of cocoa powderÂ
đ«1 tbsp baking soda
đ«1 tbsp baking powderÂ
đ«2 cups of hot (boiling) water
đ«2 cups of flourÂ
Coffee:
đ«1 tsp instant coffeeÂ
đ«1/2 cups of coffeeÂ
đ«1 tsp rum extractÂ
Chocolate Ganache:
đ«1 chocolate bar or 1/2 cup of chocolate chipsÂ
đ«1/4 cup (or more) of heavy cream or non dairy substitute.
Directions:
In a large bowl combine the sugar, eggs oil rum and vanilla extract, cocoa powder and baking powder until smooth.
Add flour and hot water gradually and mix until a smooth consistency, it will be liquidy, thatâs just fine.
Transfer into an oiled sheet pan or dish, bake at 360F for about 30-40 minutes.
Ready when a toothpick comes out dry.
