Cheese Blintez (Crepes)

Cheese Blintez Recipe

Ingredients:
Blintez Batter
🍓1 cup flour
🍓1 tsp baking powder
🍓1/4 tsp salt
🍓1 tbsp sugar
🍓1/2 tsp vanilla extract
🍓2 eggs
🍓1 cup milk
🍓1 Tbsp cooking oil
🔖1/4 cup water (if batter too thick)
Filling:
🍓1 cup sour cream
🍓1 tbsp sugar
🍓1/2 tsp vanilla extract
🍓2 tbsp walnuts
🍓2 tbsp raisins/dried cranberries
🍓2 tbsp chopped almonds
🍓Top with powdered sugar
Directions:
Mix all batter ingredients to make a smooth thin batter, if batter is too thick add a bit of water (or milk) until you have reached the consistency.
Heat a large flat pan with just a little bit of oil spray, when hot, grab a ladle and pour onto the pan, spread and shape the batter into a large circle, this will take practice, watch my video to see how I do it 📺.
when batter is cooked on one side we will now flip it and wait about 30 seconds, place it on a plate and stack all of your crepes.
Filling: Mix all ingredients into a thick paste, taste it, I don't like it too sweet because I like to add maple syrup on top... but you can defiantly add more sugar to the mix.
Place the cheese in the center of the crepe and roll, I like mine small so i cut the crepe in half and make them into smaller portions.
Powder some sugar on top and serve with strawberries and whipped cream.
